07:00 · Early swim

The pool is deserted and the towel service has not yet begun. There is a coffee cart by the entrance with single-origin filter coffee, no menu and no queue. This is the finest half hour of the day.

08:30 · Terrace breakfast

Eggs to order, pastries from the kitchen oven, a small plate of seasonal fruit. We do not believe in breakfast buffets. We believe in plates carried by waiters who have served the same families for ten years.

10:00 · Spa or sea

Both work. The spa hammam is bright and quiet in the morning. The sea is calmest before midday. Most guests choose one and regret not doing both; the rare guest does both.

13:30 · Extended lunch

Three hours at the lagoon bistro, with a bottle of light white and a plate of grilled fish you did not know you wanted. No phones, no rush. This is the meal you will remember.

18:00 · Golden hour terrace

Aperitif on the upper deck. The bar staff will know your name by the second day. The signature negroni is built on a vermouth we make on-site; it is the most surprising drink on the property.

21:00 · Tasting menu

Eight courses, two hours, one wine pairing. We have spent years assembling this evening. We hope it is worth the journey.

23:30 · A brief hour at the table

Or a leisurely walk back to the suite. Either way: tomorrow begins at 07:00 with a swim, and the cycle is the entire point.
